How To Prepare Ogbono Soup
To cook ogbono soup, you will need:
Ingredients:
1 cup ogbono seeds
2-3 cups water
1/2 cup ground crayfish
1 medium onion, diced
1 habanero pepper, diced (optional)
1 cup palm oil
1 cup diced beef, goat, or lamb
2 cups beef or chicken broth
Salt, to taste
1 cup diced okra (optional)
1/2 cup ground peanuts (optional)
2-3 cups water
1 cup chopped spinach or other leafy green (optional)
Instructions:
Grind the ogbono seeds into a fine powder using a coffee grinder or mortar and pestle.
Heat a large pot over medium heat and add the ground ogbono seeds. Cook for 2-3 minutes, stirring constantly, until the seeds become fragrant and start to stick to the bottom of the pot.
Add 2-3 cups of water and the ground crayfish to the pot and stir to combine. Bring the mixture to a boil, then reduce the heat to low and let it simmer for 10-15 minutes.
In a separate pan, heat the palm oil over medium heat. Add the diced onion and habanero pepper and sauté until the onion is translucent.
Add the diced meat to the pan and cook until it is browned on all sides.
Add the beef or chicken broth to the pan and bring the mixture to a boil. Reduce the heat to low and let it simmer for 10-15 minutes.
Add the okra and ground peanuts to the pan, if using, and continue cooking for an additional 5-10 minutes.
Add the contents of the pan to the pot with the ogbono soup and stir to combine. If the soup is too thick, add more water to thin it out to your desired consistency.
Bring the soup to a boil, then reduce the heat to low and let it simmer for an additional 10-15 minutes.
Add salt to taste and stir in the chopped spinach or other leafy green, if using.
Serve the ogbono soup hot with a side of white rice, yam, or pounded cassava. Enjoy!
